Slice the potatoes. If using a French fry cutter, cut into ¼–½ inch fries. If using a knife, trim ends, cut into slabs, then into even strips.
Soak the fries. Place in a bowl of cool water for 10 minutes to remove starch, which makes them crispier.
Dry the fries. Pat thoroughly with a paper towel.
Season the fries. Lay fries on a parchment-lined baking sheet. Toss with oil. Sprinkle with half the seasonings, toss, then add the rest.
Preheat the air fryer. Set to 400°F for 5 minutes. Don’t skip—preheating ensures crisp fries.
Cook the fries. Arrange in a single layer in the air fryer basket. Cook 6 minutes, shake, then cook another 6 minutes. Check for doneness and add 2 minutes at a time until crisp to your liking.
Finally, serve. Dip in tartar sauce, Caesar dressing, ketchup, mustard, or guacamole.
