- 1 ¼ C almond flour fine blend
- ¼ t baking soda
- ¼ t salt
- ¼ C avocado oil or olive oil
- ¼ C maple syrup
- 1 t vanilla
- ½ C mini chocolate chips
Pre-heat the oven to 350 degrees and line a baking sheet with parchment paper.
Mix the almond flour, baking soda, and salt in a large bowl.
Add the avocado oil, maple syrup, and vanilla to the dry ingredients and stir until combined.
Fold in the mini chocolate chips and stir well.
Using a spoon, drop small amounts of dough onto a parchment-lined baking sheet. I usually make about 12 small cookies from each batch.
Bake the cookies for 10-12 minutes.
Cookie Tips
-
If you bake them immediately, they’ll spread a bit more and turn out thinner—but still amazing.
-
For a thicker cookie, refrigerate the dough for 30 minutes before baking.
-
Avoid coarse almond flour, which will make the texture grainy.
-
Double or triple the recipe and keep the dough in the fridge to bake cookies fresh anytime
