Asian Stir Fry with Peanut Sauce

This asian skillet meal is made in made in 15 minutes and is delicious for leftovers!

Ingredients

  • 2 lbs ground beef turkey, or chicken
  • ½ C matchstick carrots
  • 8 oz can water chestnuts - drained optional
  • 2 t minced ginger
  • 1 t minced garlic
  • ¼ C coconut aminos or low sodium tamari
  • Salt + pepper to taste
  • Peanut sauce - to taste Naked & Saucy is a good option with clean ingredients
  • Romaine or iceberg lettuce
  • Cooked rice optional

Instructions

  • Heat a large saute pan on medium high heat and add the ground meat and the carrots and cook until the meat is cooked through.
  • Add the minced ginger, minced garlic and coconut aminos and continue to simmer for a few minutes.
  • Add desired amount of peanut sauce (I use ¼ C) and stir.
  • Add salt and pepper to taste.
  • Serve on lettuce leaves or with rice.
  • Top each lettuce leaf with the meat mixture and a dab of the peanut sauce.

Notes

*iceberg lettuce, romaine, and butter  lettuce work well for wraps
*turn this recipe into a bowl style meal by chopping up the lettuce, then adding the meat and veggie mixture, rice, and peanut sauce!
*this meal is is delicious for leftovers
*ground turkey and ground chicken also work well in this recipe
