Instructions
Line a baking sheet with parchment paper and preheat the oven to 350°F.
In a large bowl, add the palm shortening or butter, brown sugar, egg, and vanilla and beat together with a hand mixer on medium speed until smooth.
In a separate bowl, add the flour, quick oats, baking powder, and seasoning packet. Stir until combined.
Add the dry mixture to the wet ingredients. Mix with the hand mixer until everything is well blended.
Using a spoon, stir in the chopped apple until combined.
Use a small cookie scoop or spoon to portion the dough onto the baking sheet, leaving space between each cookie. Flatten slightly with your fingers.
Bake for 8–10 minutes or until lightly browned. Makes about 24 cookies with a small scoop.
