These 6-ingredient homemade cookies with chocolate chips and pecans are light, crispy, and tell the Resurrection story. Perfect for Easter!

Ingredients
1Csugar
3egg whites - room temperature
1twhite vinegar
Pinchof salt
¾Cchocolate chipsoptional
1Cchopped pecansoptional
Instructions
Preheat oven to 250°
Chop the pecans to desired size. I like a rough chop.
In a mixing bowl add the sugar, egg whites, vinegar and salt. Using a whisk attachment beat on high 4-5 minutes or until stiff peaks form. At this point the meringue should be creamy and slightly stiff.
Stir in the chocolate chips and pecans.
Line a baking sheet with parchment paper.
Spoon desired size of meringue mounds (I like them apx 1 ½ “) onto the sheet pan and bake for 50 minutes to 1 hour. Check to see that they are not soft on top. If still soft then bake 5 more minutes or until no longer soft.
Let cool on the counter for 30 min before eating (if you can wait that long).
Store in an airtight container once completely cooled to keep from becoming chewy.

Preheat the oven to 250°F.
Place pecans in a baggie and beat with a wooden spoon. Set aside. (After Jesus was arrested, he was beaten by the Roman soldiers. John 19:1-3)
Smell the vinegar. Measure 1 teaspoon and pour it into the mixing bowl. (When Jesus was thirsty on the cross, he was given vinegar to drink. John 19:28-30)
Add egg whites to the vinegar. (Eggs represent life. Jesus gave His life to give us life. John 10:10-11)
Add salt to the mixing bowl. (Salty tears shed by Jesus' followers and the bitterness of our own sin. Luke 22:27)
Beat with a mixer on high for 1-2 minutes until stiff peaks form.
Slowly add sugar to the mixing bowl while continuing to whisk for 1-2 more minutes. (This is the sweetest part of the story. Jesus died because He loved us. Psalm 34:8 & John 3:16)
The meringue turns white, representing purity in God’s eyes for those cleansed by Jesus. (Isaiah 1:18 & John 3:1-3)
Gently fold in chopped pecans and chocolate chips.
Drop spoonfuls of meringue onto a parchment-lined baking sheet. (Each mound represents the rocky tomb where Jesus' body was laid. Matthew 27:57-60)
Bake for 50 minutes to 1 hour until the cookies are firm. (The tomb was sealed. Matthew 27:65-66)
Let cookies cool completely on the counter. (On the first Easter, Jesus’ followers were amazed to find the tomb open and empty! Matthew 28:1-9)
