Ingredients
5Crotisserie chicken -each rotisserie chicken yields apx 3-4 C chicken
12ozpasta - farfalle and spiral are my favorite
1Tolive oil - to toss the noodles in
1 - 6ozjar pesto saucecan use more if you want a stronger flavor
1Cchicken broth - only if needed
½Cparmesan cheese - shredded
salt & pepper to taste
Optional: toasted pine nuts & fresh basiland extra shredded parmesan cheese
Instructions
Debone the chicken, roughly chop, and set aside.
Cook the noodles according to the package directions, drain the water, and pour the noodles back into the pot. Pour the olive oil over the noodles and stir to coat the noodles. Set the noodles aside.
In a large bowl add the chopped chicken, noodles, jar of pesto, and the parmesan cheese and stir together well.
If the chicken and pasta seems dry, then add desired amount of chicken broth if needed and stir well.
Optional: Sprinkle toasted pine nuts, fresh basil and extra shredded parmesan cheese on top of the pesto chicken and serve.
Notes
Sometimes the pesto chicken pasta cools off too quickly before serving. If this happens simply pour the mixture into a glass baking dish and heat for 10-15 minutes in a 350 degree oven or heat in a large skillet on the stovetop.
