Equipment

  • Cast Iron Skillet 10"

Ingredients

  • 4 eggs
  • 1 C milk
  • 1 C flour Gluten Free or Regular
  • ¼ t salt
  • 2 tablespoon sugar
  • 2 tablespoon butter for the pan

Instructions

  • Preheat your oven to 425°F.
  • In a large bowl, whisk together the eggs, milk, flour, salt, and sugar until smooth.
  • Spread the butter on the bottom and sides of your chosen baking dish.
  • Place the dish into the pre-heated oven on the middle rack for 5 minutes to heat through.
  • Carefully remove the hot dish, pour the batter into it, and return it to the oven.
  • Bake for 15-20 minutes, until the pancake puffs up and the edges are lightly browned.
  • Remove from the oven and let it settle slightly. Serve warm with your favorite toppings.
