Summer Blackberry Cobbler

This blackberry cobbler is juicy, sweet, and made with healthy ingredients—no refined sugar! A perfect summer dessert with fresh or frozen berries.

Ingredients

Filling Ingredients

  • 6 C frozen blackberries do not thaw
  • ½ C maple syrup
  • 1 tablespoon lemon juice
  • 2 Tablespoons cornstarch

Topping Ingredients

  • ¾ C quick oats
  • ¾ C all purpose baking flour I use GF
  • ½ C coconut sugar can substitute with brown sugar
  • ½ t cinnamon can omit if desired
  • ¾ C butter softened

Instructions

  • Preheat your oven to 350°F.
  • In a large bowl, combine the blackberries, maple syrup, lemon juice and cornstarch. Pour this mixture into an 8X8 (or slightly smaller) glass baking dish and spread out evenly.
  • In the same bowl, combine oats, flour, sugar, and cinnamon. Stir together with a spoon.
  • Add the softened butter and mix until the topping forms a crumbly dough.
  • Dollop the topping evenly over the berries and gently spread using your fingertips.
  • Bake for 40 minutes or until the topping is lightly golden and the filling is bubbly. Let cool for at least 10 minutes before serving.
  • Optional: Serve with vanilla ice cream, whipped cream, or even a drizzle of cold heavy cream.

Notes

Note: King Arthur gluten-free all-purpose flour works well in this recipe. Just make sure your flour has xanthan gum to help bind the dough.
