  • Farfalle or spiral pasta: Next, choose farfalle or spiral pasta, as these shapes hold the sauce well. However, any pasta will work.
  • Olive oil: Then, use a splash of olive oil to coat the noodles and prevent them from sticking.
  • Jar pesto sauce: After that, add one jar of pesto sauce, or use two jars if you want a stronger flavor. Delallo is my favorite brand with clean ingredients and a delicious flavor.
  • Chicken broth: Additionally, consider adding chicken broth for extra moisture, but this step is optional.
  • Parmesan cheese: Finally, sprinkle shredded Parmesan cheese for a rich, cheesy finish.
  • Optional toppings: For an extra touch, you can include toasted pine nuts, fresh basil, and more shredded Parmesan cheese.

Instructions

  1. Step 1: Debone the chicken, roughly chop, and set aside. Cook the noodles according to the package directions, drain the water, and pour the noodles back into the pot. Pour the olive oil over the noodles and stir to coat the noodles. Set the noodles aside.

    In a large bowl add the chopped chicken, noodles, jar of pesto, and the parmesan cheese and stir together well.

    Optional: Sprinkle toasted pine nuts, fresh basil and extra shredded parmesan cheese on top of the pesto chicken and serve.

Hint: Don’t Overcook the Pasta: Cook the noodles al dente to avoid mushy leftovers.

Ingredients

  • 5 C rotisserie chicken - each rotisserie chicken yields apx 3-4 C chicken
  • 12 oz pasta - farfalle and spiral are my favorite
  • 1 T olive oil - to toss the noodles in
  • 1 - 6 oz jar pesto sauce can use more if you want a stronger flavor
  • 1 C chicken broth - only if needed
  • ½ C parmesan cheese - shredded
  • salt & pepper to taste
  • Optional: toasted pine nuts & fresh basil and extra shredded parmesan cheese

  • Debone the chicken, roughly chop, and set aside.
  • Cook the noodles according to the package directions, drain the water, and pour the noodles back into the pot. Pour the olive oil over the noodles and stir to coat the noodles. Set the noodles aside.
  • In a large bowl add the chopped chicken, noodles, jar of pesto, and the parmesan cheese and stir together well.
  • If the chicken and pasta seems dry, then add desired amount of chicken broth if needed and stir well.
  • Optional: Sprinkle toasted pine nuts, fresh basil and extra shredded parmesan cheese on top of the pesto chicken and serve.

Notes

Sometimes the pesto chicken pasta cools off too quickly before serving.  If this happens simply pour the mixture into a glass baking dish and heat for 10-15 minutes in a 350 degree oven or heat in a large skillet on the stovetop.
