Easter Meringue Cookies - Simple & Meaningful

These meaningful Meringue Cookies effortlessly melt in your mouth, thanks to their delicate exterior. Meanwhile, the pecans and chocolate chips create a wonderful texture. Additionally, the slightly hollow interior beautifully represents the empty tomb, making these Easter Cookies a perfect way to reflect on the powerful story of Jesus' resurrection.

Ingredients

  • Sugar – Not only does it sweeten the cookies, but it also helps stabilize the meringue.
  • Egg whites (room temperature) – These create the structure for the meringue, making the Resurrection cookies incredibly light and airy.
  • White vinegar – By stabilizing the egg whites, it helps them whip up with greater volume.
  • Pinch of salt – Enhances the overall flavor and balances out the sweetness.
  • Chocolate chips – Provide a sweet, melty surprise in every bite, making the Easter Cookies even more delicious.
  • Chopped pecans – Add a satisfying nutty crunch that perfectly complements the delicate texture of the meringue.

Instructions for these Easter Meringue Cookies

  1. Step 1: First, rough chop the pecans. Then, in a mixing bowl add the sugar, egg whites, vinegar and salt.

  1. Step 2: Next, whisk all the ingredients (except the pecans and chocolate chips) until stiff peaks form.

  1. Step 4: Lastly, spoon meringue dollops onto the parchment lined baking sheet and bake.

Substitutions for the Easter Cookies

Absolutely do not substitute anything in these Meringue cookies! One time, I made these at a friend’s house who didn’t have white vinegar. So, we decided to use apple cider vinegar instead, and unfortunately, they turned out awful! The overpowering flavor completely ruined the batch, and I never made that mistake again.

Variations

  • Nut-Free Version – Some kids don’t like nuts, so feel free to omit the pecans.
  • Peppermint Meringues – Mix in peppermint extract and swirl in natural red food coloring for a festive holiday treat.

Equipment Needed for the Easter Cookies

  • Mixer with whisk attachment – Best for creating fluffy meringue, but a standard beater works with extra whipping time.
  • Large baking sheet – Provides ample space for cookies to spread slightly.
  • Parchment paper – Prevents sticking and ensures easy removal.
  • Spoons – To scoop and shape the meringue.

Storing the Easter Meringue Cookies

Cooling: First, let cookies cool completely on the counter for at least one hour before storing.

Storage: Next, keep the Easter Cookies in an airtight container at room temperature to prevent them from becoming chewy.

Freezing: These cookies freeze well! Store in an airtight container and thaw on the counter.

Top Tips

  • Start with Clean Equipment – Any grease or moisture in the mixing bowl can prevent the egg whites from whipping properly.
  • Use Room Temperature Egg Whites – They whip up faster and achieve more volume.
  • Low and Slow Baking – Bake at a low temperature (250°F) to dry out the cookies without browning them.

The Resurrection Story through Easter Meringue Cookies

  1. First, preheat the oven to 250°F.
  2. Next, place pecans in a baggie and beat with a wooden spoon. Set aside. (After Jesus was arrested, he was beaten by the Roman soldiers. John 19:1-3)
  3. Now, smell the vinegar. Measure 1 teaspoon and pour it into the mixing bowl. (When Jesus was thirsty on the cross, he was given vinegar to drink. John 19:28-30)
  4. Then, add egg whites to the vinegar. (Eggs represent life. Jesus gave His life to give us life. John 10:10-11)
  5. After that, add salt to the mixing bowl. (Salty tears shed by Jesus' followers and the bitterness of our own sin. Luke 22:27)
  6. Now, beat with a mixer on high for 1-2 minutes until stiff peaks form.
  7. After 2 minutes of whisking, slowly add sugar to the mixing bowl while continuing to whisk for 1-2 more minutes. (This is the sweetest part of the story. Jesus died because He loved us. Psalm 34:8 & John 3:16)
  8. As the meringue turns white, it represents purity in God’s eyes for those cleansed by Jesus. (Isaiah 1:18 & John 3:1-3)
  9. Gently fold in chopped pecans and chocolate chips.
  10. Next, drop spoonfuls of meringue onto a parchment-lined baking sheet. (Each mound represents the rocky tomb where Jesus' body was laid. Matthew 27:57-60)
  11. Then, bake for 50 minutes to 1 hour until the cookies are firm. (The tomb was sealed. Matthew 27:65-66)
  12. Finally, let the cookies cool completely on the counter. (On the first Easter, Jesus’ followers were amazed to find the tomb open and empty! Matthew 28:1-9)

FAQ

Why did my Meringue Cookies turn out chewy instead of crispy?

They may have absorbed moisture from the air. Try baking them longer at a lower temperature and letting them cool in the oven.

How do I know when my meringue is whipped enough?

Stiff peaks should form when you lift the beaters, and the mixture should be glossy.

Meringue Cookies

These 6-ingredient homemade cookies with chocolate chips and pecans are light, crispy, and tell the Resurrection story. Perfect for Easter!

Ingredients

  • 1 C sugar
  • 3 egg whites - room temperature
  • 1 t white vinegar
  • Pinch of salt
  • ¾ C chocolate chips optional
  • 1 C chopped pecans optional

Instructions

  • Preheat oven to 250°
  • Chop the pecans to desired size. I like a rough chop.
  • In a mixing bowl add the sugar, egg whites, vinegar and salt. Using a whisk attachment beat on high 4-5 minutes or until stiff peaks form. At this point the meringue should be creamy and slightly stiff.
  • Stir in the chocolate chips and pecans.
  • Line a baking sheet with parchment paper.
  • Spoon desired size of meringue mounds (I like them apx 1 ½ “) onto the sheet pan and bake for 50 minutes to 1 hour. Check to see that they are not soft on top. If still soft then bake 5 more minutes or until no longer soft.
  • Let cool on the counter for 30 min before eating (if you can wait that long).
  • Store in an airtight container once completely cooled to keep from becoming chewy.
