During a weekend visit to my good friend’s family she made these Healthy & Easy No Bake Peanut Butter Crunch Bars, and I was immediately hooked! They were the perfect balance of healthy ingredients and sweet satisfaction, curbing my major sweet tooth without any guilt. The combination of peanut butter, honey, oats, and crispy rice cereal was so simple yet irresistibly delicious. How to Make Peanut Butter Crunch Bars

Making these bars is as easy as 1-2-3. Here’s how to do it:

  • Step 1. In a large pot, add the peanut butter and honey over low to medium heat for 1-2 minutes. Stir to combine and turn off the heat.

  • Step 2. Add the quick oats, crisp rice cereal, and mini chocolate chips to the honey and peanut butter and stir well.
  • Step 3. Pour the mixture on to a flexible cutting board and press out to a square or rectangle shape. Cover with plastic wrap and refrigerate until hardened.
  • Step 4. Cut into desired size pieces and store in the refrigerator.

Ingredients:

  • ⅔ cup peanut butter (creamy or chunky)
  • ½ cup honey
  • 1 cup quick oats
  • 2 cups crisp rice cereal
  • ⅓ cup mini chocolate chips (optional, but highly recommended! I love Enjoy life mini chocolate chips the best)

Instructions:

  1. Heat the Peanut Butter and Honey: In a medium saucepan, combine the peanut butter and honey over low to medium heat. Stir for 1-2 minutes until the peanut butter is warm (not hot) and the honey is well mixed in.
  2. Add the Dry Ingredients: Remove the saucepan from the heat and stir in the quick oats and crisp rice cereal. Mix until everything is evenly coated with the peanut butter-honey mixture.
  3. Add Chocolate Chips: Stir in the mini chocolate chips. This keeps the chocolate from melting into the mixture too early.
  4. Shape and Set: Using a flexible cutting board and pour the mixture on the board. Shape into a rectangle using your hands or the back of a spatula.
  5. Chill and Enjoy: Cover with plastic wrap and refrigerate until hardened (if you can wait that long) 1-2 hours. Once they’re chilled, cut them into squares and enjoy!

These bars are perfect for storing in the refrigerator. In fact, they taste even better after a few hours in the fridge as the flavors meld and the bars become firmer. Just store them in an airtight container in the fridge for up to 3 weeks.

Peanut Butter Crunch Bars

Ingredients

  • ⅔ C peanut butter
  • ½ C honey
  • 1 C quick oats
  • 2 C crisp rice cereal
  • ⅓ C mini chocolate chips

Instructions

  • In a large pot, heat peanut butter and honey over medium heat just to warm up the mixture then turn the heat off (maybe 1-2 minutes).  
  • Add quick oats & rice cereal to the peanut butter mixture and mix together. 
  • Stir in the chocolate chips.
  • On a flexible cutting board, form the mixture into a rectangle using the back of a spatula and cover with plastic wrap.  Refrigerate until hardened.  
  • Cut into squares and store in the refrigerator.

Notes

*You can substitute the peanut butter for almond butter or nut butter of your choice.
*I prefer the brand Enjoy Life mini chocolate chips
*Store refrigerated
