Here’s what you’ll need to make this delicious Hot Spinach Dip:

  • Artichoke Hearts in water – First, drain and chop them roughly. They add a tangy, rich bite. Canned or jarred varieties both work well.
  • Mayonnaise – Next, use this to create the creamy base. Be sure to use full-fat real mayonnaise, not low fat or substitutes.
  • Parmesan Cheese – Then, add grated parmesan for saltiness and depth. You can also try alternatives like Romano or Asiago.
  • Fresh Spinach – After that, tear off the stems and chop the leaves roughly. Although you can use frozen spinach, make sure to squeeze it dry.

  1. Step 1: First, preheat your oven to 375°F. Next, drain the artichoke hearts and chop them. Then, remove spinach stems and chop the leaves.

  1. Step 2: Next, in a large bowl, combine the artichokes, mayonnaise, parmesan cheese, chopped spinach, and seasoning. Stir until well mixed.

  1. Step 3: After that, pour the mixture into an 8x8 glass dish. Spread it evenly.

  1. Step 4: Bake for 20–25 minutes until bubbly and slightly golden on top. Serve warm with crackers, crusty bread, or fresh veggies!

  • Add Chicken – For a heartier option, stir in shredded rotisserie chicken or lay raw chicken breasts on the bottom of the dish before adding the dip mixture. Lightly salt and pepper the raw chicken on both sides. Then, bake until the chicken reaches 165°F.
  • Spicy Kick – If you like heat, mix in a pinch of red pepper flakes or a few dashes of hot sauce for an extra zing.

How to Store

Once cooled, store any leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, place in a 350°F oven until warm and bubbly again.

Can I use frozen spinach?

While fresh spinach is best, you can use frozen spinach, but it must be thawed and squeezed very well with a paper towel to remove excess moisture.

Can I use low fat mayo?

Ingredients

  • 1 can artichoke hearts in water drained & chopped
  • 1 C mayonnaise
  • 1 C parmesan cheese grated
  • 1 handful fresh spinach stems removed

Instructions

  • Pre-heat oven to 375 degrees.
  • Drain the water from the artichoke hearts and rough chop them.
  • Tear off the stems from the spinach leaves and rough chop them.
  • In a large bowl, add the chopped artichoke hearts, mayonnaise, parmesan cheese, chopped spinach, and the seasoning packet. Stir well.
  • Pour the dip mixture in an 8 x 8 glass baking dish and bake for 20-25 minutes until bubbly and slightly browned. Enjoy with crackers, sourdough bread, or with veggies!
