Why You’ll Love These Easy Roasted Mushrooms

  • Wholesome ingredients — nothing artificial, just simple, real-food flavors.
  • Rich, savory taste thanks to the garlic butter drizzle that coats every mushroom.
  • Incredibly easy — simply toss, roast, and serve.
  • Perfect for the holidays — pairs beautifully with turkey, beef, chicken, or ham.
  • Great for weeknights — fast, hands-off, and always satisfying.
  • Naturally gluten-free and low-carb, making them fit many dietary needs.
  • Customizable — add herbs, spice, parmesan, or balsamic to switch up the flavor.

Equipment Needed

Even better, you only need a few simple tools:

  • Sharp knife + cutting board — to trim mushroom stems
  • Measuring cups + spoons — to measure oil, butter, seasonings
  • Large mixing bowl — to toss the mushrooms evenly
  • Large baking sheet — for roasting
  • Parchment paper — for easy cleanup
  • Small Sauce Pan - for the butter sauce

Ingredients + Why They Work (with Substitutions)

ingredients for roasted mushrooms
  • 2 lbs whole mushrooms (button or cremini) - Cremini provide deeper flavor, button mushrooms stay mild. Substitution: Portobello chunks for a heartier version.
  • 2 ½ tablespoon olive oil - Helps the mushrooms roast instead of steam. Substitute: Avocado oil.
  • Salt + pepper - Enhances the natural umami flavor. Substitute: Seasoning salt or garlic salt.
  • ¼ cup butter - Makes the garlic butter sauce rich and silky. Substitute: Ghee or vegan butter.
  • 2 teaspoon minced garlic - Adds deep savory flavor. Substitute: ½ teaspoon garlic powder if needed.
  • 1 teaspoon Worcestershire sauce - Boosts the umami and caramelization. Substitute: Coconut aminos for gluten-free.

Variations of Garlic Butter Mushrooms

  • Spicy Roasted Mushrooms — add crushed red pepper flakes.
  • Herb Mushrooms — add thyme, rosemary, or parsley.
  • Cheesy Version — sprinkle parmesan during the last 5 minutes of roasting.
  • Balsamic Mushrooms — add a splash of balsamic vinegar to the butter sauce.

How to Clean Mushrooms the Easy Way

Contrary to popular belief, rinsing mushrooms with water is perfectly fine. Professional chefs have shown they absorb only a tiny amount of water. Simply place them in a colander, rinse quickly, and pat dry. It’s fast, easy, and effective!

How to Store & Reheat Leftovers

  • Refrigerate:
Store in an airtight container for 3–5 days.
  • Reheat:
    • Warm in the oven at 350°F for 8–10 minutes, or
    • Microwave in short bursts until heated through.
  • Freezing: Not recommended — mushrooms become mushy when frozen and thawed.

Ways to Use Leftover Roasted Mushrooms

  • Add to scrambled eggs or omelets
  • Add to pasta or risotto
  • Serve over steak or chicken
  • Mix into soups
  • Add to flatbreads or pizzas
